Mock Thai Butternut Squash
- 2/3 butternut squash
- curry powder (I use vata churna)
- 1 can coconut milk
- fresh ginger chopped (optional)
- panir (or tofu)
- fresh basil chopped (or parsley or cilantro)
- salt & pepper to taste
